This is a fantastically fresh tasting salad, proof it’s delicious was the fact my 7 year old wolfed it, whereas normally salad is pretty much kryptonite…
- 1 Bag ready washed mixed leafy salad
- 1 Fennel bulb
- 2 Oranges
- Olive Oil
- Salt and Pepper
Trim and remove the outer leaf from the fennel then slice as thinly as possible. Peel the oranges and cut in 1/2 cm slices, removing any pips in the process.
Mix the lot in a salad bowl and dress with olive oil, salt and pepper.
