I scream, you scream, we all scream…

For nicecream! I know, I know, the name is SO cheesy, BUT, this is the stuff of dreams! A completely guilt free, delicious, nutritious dessert that you could even have for breakfast!

A couple of years ago I finally took the plunge and bought a high-speed blender. They are pretty darn expensive as blenders go, and I swithered and dithered for ages! So glad I did! It turned out to be a great investment. There are so many things I use it for! One of the coolest ones it allows you to make quickly and painlessly is nicecream.

The base for nicecream is blitzed frozen bananas; that’s what gives it that lovely ice-creamy creaminess.  I keep a stash of frozen chunks of peeled, ripe bananas in the freezer; I deliberately let some of the bananas I regularly buy, go very ripe and then just, peel them, cut them up and put them in a freezer bag.

All you do is put some in a blender and add a flavour, any flavour really,  some of my favorites are: berries, cherries, cocoa powder, peanut butter, coconut and pineapple (pina colada!).

The one in the picture was made with the equivalent of two/three frozen bananas and roughly a cup and a half of frozen raspberries, nothing else!

You can also make it in a food processor, a Nutri-bullet or a standard blender; it just takes a little more patience, and you will likely need to scrape the mixture from the sides every so often. Then, at some point, the magic happens, and it turns all creamy and delicious! You can help the process by adding a LITTLE nut or soy milk to the mix but don’t overdo it or you’ll get a slushy mush rather than ice cream!

Some other ideas for flavouring: lemon, vanilla, pistachios, fresh mint. Basically, you have a blank (but tasty!) canvas, have fun creating!
